The story behind Jay's is as West Texas as it gets. Owner and pitmaster Jay Stearns grew up in Abilene, spent a decade as a computer technician in Central Texas, and returned home to build custom offset smokers from scratch using his welding skills before launching a food trailer with his wife Diana. But the food is only part of the story. The Shed has deep roots — and knowing where it came from makes every bite taste a little better.

The story begins in 1989, when Hollis and Betty Dean grew their small catering business into a steakhouse and BBQ restaurant on their family farm in Wingate, Texas. The Shed thrived in that small community for years, providing jobs for family members and neighbors alike. Their oldest grandson Byron, worked his way up through every role in the restaurant, starting as a dishwasher and eventually becoming the manager. In 1997, Byron's girlfriend Stacie joined the team as a waitress and hostess. Two years later, they were married — a love story born, appropriately, over great barbecue.

When Hollis and Betty retired from the Wingate location, Byron and Stacie moved to Abilene and kept the family catering legacy alive, starting in 2005. In 2018, Byron and Stacie opened The Shed Market in Abilene — bringing together a premium BBQ lunch service, a raw meat market stocked with the highest-quality cuts, and the catering operation that had started it all. The Abilene community rallied around them immediately. By 2022, Byron and Stacie had purchased their own land and built a standalone location where the Shed Market is located today!


Crane's Craft BBQ at the Wagon Wheel

The setting alone is worth the visit. Crane's occupies the historic Wagon Wheel Dance Hall in Tye, just west of Abilene. Once a beloved community gathering spot, built in 1958 by the Abilene Area Square & Round Dance Association, it hosted weekly dances for over six decades before William and his wife, Erika, bought it in September 2023. William did much of the renovation work himself, building a stage at one end and a serving line at the other, turning it into one of the only BBQ joint-dance hall combinations in Texas.

William's story is as compelling as his brisket. A 22-year Army combat veteran who served five of those years in Iraq, he was introduced to BBQ by a fellow soldier after returning home — a way to slow down and find peace in something positive. He built custom smokers, refined his craft, and eventually turned a dream of faith, family, food, and fun into a real business alongside Erika, who was born and raised in Chihuahua, Mexico, and who had been a key figure in opening the Hilton Downtown Abilene before leaving to work at the restaurant full time.

That dual heritage is baked directly into the menu. Crane's serves Central Texas BBQ with Southern influence from William's Mississippi roots and Mexican influence from Erika's — and the combination works beautifully. William cooks exclusively with post oak. The meats are seasoned only with salt, pepper, and smoke. Sauce is available on the side but is rarely needed.
